Recipe: Seafood Boil!

I’ve been wanting to do a Seafood Boil for so long and finally did it last weekend; highly recommend! The flavor was perfect and it was so easy to do. I used three different types of sausage in the boil, all from the Kiolbassa brand. I used their Smoked Beef Sausage, Jalapeño Beef Smoked Sausage and Roasted Garlic Smoked Sausage; we love their meats! The jalapeño and garlic sausages especially added to the overall flavor of our meal.

Seafood Boil

INGREDIENTS:
  • 1⁄2 cup Old Bay Seasoning
  • 2 tablespoons salt
  • 4 quarts water
  • 1 (12 ounce) can Coca-Cola (see substitute options below)
  • 1 bag small gold potatoes
  • 1-2 large white onions, cut in wedges
  • 2 lbs smoked sausage, cut in 2 inch lengths (try with flavored sausage to change it up!)
  • 8 ears fresh or frozen corn on the cob (thawed)
  • 4 lbs large shrimp, in shells
DIRECTIONS:
  • In an 8-quart stock pot, bring Old Bay, salt, water and Coca-Cola to a boil. Coca-Cola can be substituted for an equal amount of beer or apple juice.
  • Add potatoes and onions; cook over high heat for 8 minutes.
  • Add smoked sausage-cook on high for 5 minutes.
  • Add corn to the pot and continue to boil for 7 minutes.
  • Add shrimp (in shells), cook for 4 minutes.
  • Drain liquid. Pour contents onto sheets or in bowls.

I came across my wedding photos the other day. WHOA.😳I’m sure I’m not the only one that recognizes a change. As we age, get married, maybe have babies (and then devote our time and bodies to them) it can be easy to let yourself go a little bit. We stop caring as much about hitting the gym and all of those yummy homemade married meals and desserts (and margaritas!🤣) start taking a bit of a toll. 5 pounds turns to 10. Or 15. Or heck maybe even 50.

Looking back, I can’t remember a time that I DIDN’T want to lose a few pounds. That’s always been me. But as I’ve gotten older and happier with who I am I haven’t worried as much about the extra calories in “one more glass of wine” or eating my kids leftover Mac and cheese for lunch because hey, I don’t want to be wasteful.😬😅
The problem with that is, after a couple years, I found myself looking at someone I didn’t want to be. It’s not just about the weight but about the confidence and how my clothes fit and the things I didn’t want to do because of these new insecurities. I’ve tried diets and cleanses and keto and intermittent fasting and while all of those can leave you with great results, it can be difficult to stick with long term.

For the most part I eat healthy. I focus on salads and vegetables and throw in protein shakes and protein bars when I get hungry. But I’m also not one to turn down a taco Tuesday or a White Claw (or four) #balance.😂I don’t stick to a strict exercise plan and quite honestly I don’t want to. My kids are still little and I like taking them on walks and bike rides or spending our afternoons dancing to songs from The Greatest Showman.

I thought I had gotten to an age that I would always feel self-conscious in a swimsuit, would always be nervous to take my coverup off, would always have that extra belly bloat that reminds me of being 10 weeks pregnant, and always wearing loose t-shirts to hide my midsection. And I was almost okay with it because honestly I didn’t know what else to do. Devoting hours a day to exercise didn’t seem feasible long term and I didn’t want to give up my occasional treats.

INSERT TRIM. I’ve been blown away. The difference I’ve seen so quickly has blown me away. 1 tablespoon, once a day (preferably morning) and I very quickly noticed a difference in my midsection.
